Taste of spring in the middle of winter

After our walk yesterday we went into the garden to check the carrot patch.  Hisnibs had covered the bed with leaves a couple of months ago so we weren’t sure if anything was left of the carrots still in the ground then.  Not finding any green carrot tops under the mulch, we were ready to accept the carrots hadn’t survived, but then I noticed orange just below the surface of the soil.  A small carrot, than another and another.  They weren’t perfect, a few dark spots which we cut off and voila, we had a dinner salad comprised of the last of the leaf lettuce in the window box and carrots .  An experiment that succeeded, so far anyway.  Steamed carrots for dinner, grated carrot salad for lunch – looking forward to more tastes of spring before this winter is over.

    Yum, yum! We did not get carrots planted last spring. Will remedy that this year. They taste so much better than store bought. Had to fence the garden though as the Cairns like to dig them up and eat them on us!😅😅. Enjoy your find!
